Mahi-Mahi, also known as dolphinfish (no relation to the mammal), are blazingly colorful offshore predators that hunt in the Gulf's weed lines. Their colors shift through electric blue, green, and gold when they're alive and fade almost instantly after death, making them a photographer's challenge.
